I'd somehow missed that this book was available, just placed an order with amazon :)

Assuming you're referring to BERENJENAS A LA MORISCA/MOORISH EGGPLANT, the one with cheese & coriander, we made that dish for a Spanish Banquet a few years back - it's mighty tasty! (One of these days I have to go back & try it with Bacon, we did a vegetarian version...)
