Recipe: Roasted assorted roots

Take the bunch of carrots and the bag of beets from the weekly veggie box. Pare and dice. Peel and dice the large onion from the same source. Also one of the heads of garlic, ditto, but mince rather than dice.

Line a baking dish with some of the cheapo odd offcut ends of prosciutto that were sitting there at the grocery at an unbelievably low price. Add a layer of veggies. Add another layer of prosciutto. Add another layer of veggies. Cut a few slices of bacon into square pieces and distribute evenly over the surface. Cover the baking dish and put in a 350F oven.

Go off and assemble furniture in the music/guest room. Check the dish after an hour and a half. Discover that the carrots are still much too crunchy. Return them to the oven and eat soup for dinner instead. Do a bunch of housecleaning and organizing. Remember that the veggies are still roasting and turn the oven off. Continue puttering around and organizing. Forget that the baking dish is still sitting in the oven when you go to bed. Take it out of the oven the next day at dinner time and microwave until hot. Serve the contents over thin slices of toasted sourdough.

Yummy.

(Yes, I really am that cavalier about unrefrigerated food most of the time when it's just me eating it. I do make a rational assessment of the contents, the sterilizing properties of whatever cooking process they've gone through, and their accessibility to ambient microbes. But it's rational, not paranoid.)

Thank you for letting me know I am not the only single person who is lackadaisical about unrefrigerated food, and/or how long leftovers have been in the refrigerator. I've been cooking forever, and I've survived this long - so evidently I *do* have a rational knowledge of food spoilage. Had an ex, however, who was sure I was going to poison both of us ;-)
