I keep at least one jar of salted lemons in the fridge at all times. That way I can pull out a piece to flavor a tagine or whatever. They keep indefinitely in the fridge.

Method:
Wash and quarter lemons. Pack into a large mason jar, layering with plenty of salt and flavorings. I usually use a broken cinnamon stick, some cloves, a bay leaf, and peppercorns.
