I took the results of yesterday's appetizer experiments in to work to get some additional opinions. I don't know if I primed them too much with my own evaluations, but the results matched my own conclusions fairly closely:
* The stuffed mushrooms are pretty much perfect, although it was suggested that a more strongly flavored 'shroom (e.g., a shiitake) might be even better.
* The cauliflower puffs have good flavor but poor presentation. After some discussion, I'm thinking of deliberately trying for more of a "mini-pancake" effect, as long as I can avoid pumping up the calories.
* The carrot clumps need to be renamed and still need serious R&D work on the physical structure (although even a professed carrot-non-eater liked the taste). The sesame seeds were felt to be a distraction (with which I agree). I have about half the batch still sitting at home and plan to try some additional cooking time to see if I can get the rice flour to work up a bit more solidly.
Of course, if part of the purpose is to serve these to my family, then having seafood-stuffed mushrooms as the Main Event is not a path to success, but I have a few other ideas to start working on.
