I got a breadmaker at some point, and started using it regularly when it was hard to get to the supermarket regularly post-quake, and stuck with it because it saves plastic bread bags. But because it's just me, I found if I made a loaf it'd go stale before I could enjoy it all, and eventually I hit on the perfect solution: large muffin tins. So now I make up the loaf in the breadmaker but take it out before the bake cycle, divide it into six, turn each bit into either a sort of dumpling or a scroll with some filling or other, and plomp in the muffin tray. I do let them rise again - either the breadmaker has insufficient rising time or my house tends to be on the cool side so this makes a massive difference - before baking. Then once cooled I put them in the freezer and take one to work each day.
