I voted for the last option, inspired no doubt because the missing item from my shipment is my good fabric. Sigh. But my second choice is by colour--the other information is in your database, but the bins will look nicer when you open them if you've got them arranged by colour and hue. There is no reason they can't be pretty while in storage!
In what orientation do you store your fabric in the bins? I discovered years ago packing my tourney chest that if I stand the chest on end and stack the folded tunics upwards from there that I could get way more things into the chest than if I stacked them flat from the bottom of the chest, and I had the added advantage of being able to see the folded edge of every item at once, without removing everything. I now do the same with my fabric stash (when the shipping company doesn't misplace it).
What a question - I bin my fabric by color, but lately I've been thinking that I needed to re-bin by fiber type.
Knowing you, though, the obvious answer is that you'll likely do it by order of acquisition and put it all in the database then label all the bins in a clever yet inscrutable numbering system. Oh, and the labels will be in green and white.

Just a guess.
