I sort of riffed this off several on-line recipes, but it isn't quite like any of them.
Part A:
Pare sweet potatoes and slice thinly.
Dot a baking pan with butter.
Part B:
Add a layer of sweet potatoes.
Sprinkle with pumpkin pie spice mix.
Drizzle with maple syrup
Dot with butter.
Repeat B until all the potatoes are used.
Add a sufficiency of evaporated milk (or cream).
Cover with aluminum foil.
Bake at 350 until potatoes are tender.
Uncover and continue baking until the liquid is absorbed/evaporated and the top is slightly browned.
(Total baking time uncertain, possibly 1 hour.)
It came out rather nicely, if I do say so myself.
